One of Kanazawa's top class sushi restaurants. The work is definitely good, and it's good to have a good meal. As a general rule, only courses are served, but we can also accommodate ingredients you don't like. The skill and technique of local fish match the high level, and the sushi is orthodox style. Although the restaurant is only counter-only, the owner wears a mask from beginning to end, and I personally appreciate the fact that he is not unnecessarily friendly and treats customers at an appropriate distance.

When I went to Kanazawa, I was taken here. This is a collaboration with a famous restaurant that is listed in the Michelin star.
Actually, this was my first experience at an Edomae-style sushi restaurant... There was one group first at the counter, and we started. Although it has a strong image of being aged, many of the dishes are fresh, and I was impressed by the fact that the ingredients have been rubbed by the rough waves of the Sea of Japan. Also, the owner was friendly and we had a fun meal from start to finish, making for a wonderful Edomae debut!

It happened that there were no other customers, so the atmosphere was very calm and pleasant.

It was my first time eating black-throated liver! It smelled a little fishy. I guess that's why there are so few places to serve it, even though it's such a delicious fish. Well, I'm glad I got to experience it.
The sujiko salmon roe had been loosened up in the style of salmon roe, and it had a very rich and firm flavor, and was very delicious.
And the ending with Kanpyo rolls is so cool lol
Everything else was well organized and delicious, so I would like to go again!
